Maxwell clarifies,
"the point is that bitcoin's UI uses the same stuff to print all these 256 bit hashes.
block hash is interpreted as a 256-bit little endian number for target comparison as luke says, so then bitcoin needed to print it that way too, otherwise the 0s would have been on the right which would have been confusing... and the same code was then used to print other hashes."
