I heard bitcoin core can only be at maximum speed if the entire utxo set fit in memory, but that sounds unrealistic and an overkill

Everything is faster while using RAM vs. disk, assuming the RAM is read/write faster than the disk. But Core's maximum speed would still limited by the order imposed UTXO store.
